The Vegan Butternut Soup Recipe you’ve been searching for!

As you know I am all about soups in the winter months. Last night I made a great vegan butternut soup. I got the pre-cut organic bag from Costco. It makes 4 servings.  So it’s great to eat one night and have leftovers for later in the week.

INGREDIENTS
  • 1 Large Butternut Squash ⁠
  • 1 Yellow Onion
  • Veggie Broth or 15oz can of coconut milk⁠
  • 1 tbsp of minced garlic
  • Sea salt & black pepper
STEPS

In a pan saute chopped onion in avocado oil until translucent. Add in garlic and saute for another 1-2 minutes. Then add in either veggie broth or coconut milk, depending on how creamy you want it. Both are good.  Then add in butternut squash. Let simmer on low heat until butternut is soft. Then add in sea salt and black pepper. For a twist, I often add in either smoked paprika or curry seasoning. Then toss in blender. Top with either cilantro or basil and enjoy! 👌🏼⁠
