Roasted Beet Veggie Tacos

ROOT VEGGIES are my best friend lately.  This week in my Fresh Farm box I got a ton of Golden beets so I decided to make Roasted Beet Tacos out of them.

I don’t normally eat a ton of beets, but lately, I have been craving them. In times like these when your normal routine has been shaken up, eating root veggies can be very grounding. ⁠

Last night I made Roasted Beet tacos 🌮and they were so tasty! Here is the recipe.

INGREDIENTS

3 large yellow beets ⁠
1 cup of shitake mushrooms ⁠
1/2 yellow onion ⁠
1 tbsp minced garlic ⁠
handful of cilantro⁠
1 cup of cabbage ⁠
1/2 avocado ⁠
Avocado oil ⁠
salt & seasoning ⁠
Coconut Tortillas ⁠

STEPS

Cut skin of beets⁠
Cut into cubes ⁠
Toss in 1 tbsp of avocado oil ⁠
Season with salt and chile-lime seasoning from traders joes⁠
Cook on parchment paper in the oven for 20 mins on 400⁠
Turning after 10 mins ⁠
In a saucepan add a bit of avocado oil and saute chopped onion for 2-3 mins then add garlic and mushrooms. ⁠
Add everything to the taco and enjoy it with a side of black beans. I topped the tacos with @yellowbirdsauce siracha 👌🏼⁠
